On Thursday, I cooked a joint of roast beef with all the trimmings. Today I look at the contents of my fridge and realise where the ingredients for stew come from.
Well, the trimmings I'd done were roast potatoes and parsnips, glazed carrots and buttered leeks. Basically what I did was cube up all the pink meat from the left over beef (there was a lot of left over beef!) and dust that with flour, cinammon and nutmeg. Then I fryed that with a diced onion, added a pint of stock and a couple of tins of tomatoes, chucked in all the leftover veg plus a diced stick of celery, some new potatoes (there weren't many roasties left) and some mushrooms, seasoned with more cinnamon and nutmeg and stuck it in the oven on a low heat for about 3 hours. Very handy because it freed up a bunch of space in our fridge, although we *still* have leftover beef!
